Happy August, Shabby Creek friends! It’s me, Claire, from A Little CLAIREification, back with another slow cooker favorite. This one is so easy you won’t believe it which is perfect as Back To School time draws near.
If there is one thing my Husband loves, it is Crockpot Italian Sausage and Pepper Sandwiches. He works hard and is always cooking up delicious food that I love so it’s nice to surprise him with one of his favorites every now and then.
I can toss all of the ingredients into the slow cooker and tell him not to peek or surprise him when he gets home from work.
Since the Hubs is 100% Italian American (yep, and he still married an Irish lass), it’s no wonder he has such an affection for dishes that have so much robust flavor like this one. The sausages & peppers are also excellent served over a little pasta too if you’d prefer.
Now, I am a cheese FREAK so I like to add cheese on the bread, then the sausage and sauce and top with more cheese. You can see how deliciously melty and gooey it is. I also add more banana peppers to mine but of course that is optional.

Hearty Cajun Chicken & Sausage Soup
CROCKPOT ITALIAN SAUSAGE & PEPPERS SANDWICHES
Ingredients
1 pound Italian sausage links (5 sausages)2 tbsp minced garlic
1 (16-ounce) bag frozen pepper stir-fry (with sliced green/red/yellow peppers and onions)
1/2 cup mild banana pepper rings (drained)
1 (26-ounce) jar tomato and basil pasta sauce
1 (6-ounce) can tomato paste with basil, garlic and oregano 1 tbsp italian seasoning (basil/oregano/thyme)
pepper, to taste Provolone cheese slices or shredded mozzarella for topping (optional) 5 Hoagie or sandwich rolls of your choice
Instructions
- Place sausages in slow cooker.
- Stir in the garlic, frozen pepper mix, banana peppers, tomato sauce, tomato paste, italian seasoning & pepper
- Cover, set heat to LOW and simmer 8-10 hours (or 4-5 hours on HIGH)
- 20 minutes before serving, wrap your hoagie rolls in aluminum foil and throw in a 350* oven for 10 minutes to warm (alternately, wrap two at a time in a paper towel and microwave for 20-30 seconds).
- If desired, place a slice of provolone cheese into each hoagie roll.
- Spoon a sausage and the red sauce pepper mixture into the hoagie rolls.
- Top with another slice of provolone cheese or shredded mozzarella if desired (I like cheese).

Oh my goodness, Elsa. Girl, get yourself a slow cooker! π In the meanwhile, you could use a sauce pot on the stove top to cook and simmer the sausages. Good luck!
