Who wants to turn on the oven right now? Not me – it’s so hot outside my slow cooker has become my best friend all over again and any quick and easy meal I can make to avoid the oven is high on my list.
It’s me Claire from A Little CLAIREification back with this delicious 3 ingredient Slow Cooker Buffalo Chicken which also makes a great addition to any cookout.
It certainly has a bit of a kick so it’s definitely recommended if you like a little spice, otherwise you could just substitute BBQ sauce for the wing sauce or find a milder sauce to use.
Speaking of sauce – I also noticed it’s really saucy so I think you could even double the chicken, or at least add another half a package, which I am going to do next time, especially if I am serving more than 4-5 people.
It really doesn’t get much easier than this as far as prep goes. Just toss the chicken in the ranch dressing mix and add it to the slow cooker with the sauce. Done.
We used some delicious French style rolls and you could use whichever you prefer. I love the tangy flavor of the blue cheese crumbles on top but that’s optional. You could always offer it on the side for guests that might like it.
3 Ingredient Slow Cooker Buffalo Chicken
Ingredients
- 1 package 28 oz boneless skinless chicken thighs
- 1 package 1 oz ranch dressing and seasoning mix
- 1 bottle 12 oz Buffalo wing sauce (such as Frank's)
Instructions
Add the ranch dressing packet to a large bowl. Toss each piece of chicken to coat and add to the slow cooker. Add the bottle of Buffalo sauce and toss to coat the chicken. Cook on LOW heat for 5 hours. Remove the chicken to another large bowl and shred using two forks. Return the chicken to the slow cooker and toss once more to coat with the sauce. Keep warm and serve on sandwich rolls. Top with crumbled blue cheese if desired.3 Ingredient Slow Cooker Buffalo Chicken
